Biography

PhD. in Food Science with research focused in the extraction and characterization of arabinoxylans from maize industry byproducts at Research Center for Food and Development A.C. (Centro de Investigación en Alimentación y Desarrollo A.C.) in Hermosillo, Mexico in 2010. National Researcher Level I in the National Research System of the Mexican National Council for Science and Technology (Investigador Nacional Nivel I en el Sistema Nacional de Investigadores del Consejo Nacional de Ciencia y Tecnología en México) Author and coauthor of 13 papers published in the JCR-ISI Web of Science Expanded Index Journals and 4 book chapters in international publishers

a) Functional aspects (phenolic compounds and antioxidant capacity) of cereals, legumes, fruits, vegetables and their commercial products b) Extraction of high value-added products (phenolics and dietary fiber) from cereals, legumes, fruits and vegetables byproducts
