Biography
Dr. Olfa BEN BRAÃEK received her Engineer degree (speciality of Agro-Food industries) in 2010 from the National Agronomic Institute of Tunisia. She continued then her Master study for 2 years in the same Institute to get her Master degree in Food Science and Technology (Quality and Security) in 2012. After that, she received her PhD (speciality of Biological sciences and Biotechnology) in 2017 from the High Institute of Biotechnology of Monastir, Tunisia. In her PhD study, she worked with French research group in the Laboratoire Universitaire de Biodiversité et d?Ecologie Microbienne (LUBEM) in Quimper, Université de Bretagne Occidentale (UBO), France as well as with Italian research teams belonging to the Italian National Research Council (CNR): Institute of Agricultural Biology and Biotechnology (IBBA) in Lodi and Institute of Sciences of Food Production (ISPA) in Milan. Now, she is performing a postdoctoral training in the Laboratory of Transmissible Diseases and Biological active substances (LR99ES27), Faculty of Pharmacy of Monastir, University of Monastir, Tunisia, to pursue her research on biological active substances and their microbial producers (particularly lactic acid bacteria), their molecular characterization and their applications as natural preservatives or probiotics in different fields. She has published many articles in reputable international journals and contributed to various fields of molecular biology, microbiology, food science and nutrition. She has participated to many prestigious national and international congress and symposia to present her findings and got prices and awards of best oral communication or poster. She has participated too to many workshops and conferences and was invited as a speaker in several international scientific events. She is contributing as a reviewer of scientific papers for several international journals.
